Is my extra virgin olive oil really extra? Photonics insights into food quality assessment from production to plate

Extra Virgin Olive Oil (EVOO), prized for its health and culinary benefits, is subject to strict European Union quality standards. However, during storage, EVOO undergoes changes due to autoxidation and photo-oxidation, affecting flavor, aroma, and nutritional value. Does EVOO maintain its 'extra virgin' quality up to consumption?

This talk will explore how fluorescence spectroscopy can be used to assess EVOO quality from production to consumption. Fluorescence spectroscopy has the advantage of being a rapid, cost-efficient, and at the same time sensitive technique that does not require any sample manipulation. Utilizing the natural presence of fluorophores in food, this technique can accurately detect and quantify a wide range of food constituents, including vitamins, proteins, and lipids, as well as potential contaminants like pesticides and adulterants.

Prof. Francesca Venturini, Applied Optics at the Zurich University of Applied Sciences (ZHAW) 
Francesca Venturini is Professor of Applied Optics at the Zurich University of Applied Sciences (ZHAW) and co-founder of TOELT LLC. She received her Ph.D. in physics from the Technical University of Munich (Germany) in 2003. From 2003 to 2013 she worked in the industry in different roles starting from R&D Project Manager to Head of Product Development. In 2013 she joined the Institute of Applied Mathematics and Physics of the ZHAW. Her research focuses on optical sensing and sensor development, specifically on absorption, luminescence, Raman spectroscopy, and applications of AI to photonic data.

Dr. Christian Bosshard, Managing Director Swissphotonics
Dr. Christian Bosshard received his degree in Physics (1986) and his doctorate (1991, Silver medal award) from ETH. From 2001-2021 he was working at CSEM, first as Section Head and then as Vice President and Head Photonics. Since 2013 he is Managing Director of Swissphotonics. Christian is a Fellow of Optica, Board Member of EPIC, and Member of the Board of the University of Basel.
